Recipe: Brain Food
In part one of Somefin Smells Fishy In Here!, we learned about the benefits of including fish in one’s diet. Research shows that eating fish high in Omega-3s, like wild salmon, makes you smarter and helps you sleep better. Please pass the salmon!!!
These Smarty Salmon Kabobs are easy to throw together and guaranteed to please. Plus, each bite packs a truckload of Omega-3s to boost that smart brain of yours.
Ingredients:
- 1 lb thick cut wild salmon
- 1 lemon, juiced
- 2 garlic cloves, minced
- 1 teaspoon minced fresh ginger
- 2 tablespoons honey
- ¼ cup soy sauce
- 3 tablespoons vegetable oil (plus more for grill)
- 1 cup chopped veggies
- skewers (bamboo, wood or metal)
Wow-to:
- Remove the skin from your salmon fillets and cut fish into cubes. Set fish aside.
- In a large mixing bowl, whisk together all remaining ingredients.
- Add cubed salmon to the marinade and mix to combine, thoroughly coating the fish. Cover with plastic wrap and let marinate for at least one hour.
- If using bamboo or wood skewers, let them soak in warm water while your fish marinates (30 minutes should do the trick).
- Now it’s time to thread the salmon and chopped veggies of your choice onto the skewers (4-6 pieces per skewer).
- Coat grates of grill (grill pan or skillet) with a light layer of oil.
- Once grill is hot, place skewers onto grill and cook for 3 minutes or so per side until fish is opaque and firm to the touch.
- Serve immediately and enjoy!!!
